Ingredients

6 servings
Golden syrup (golden syrup or light corn syrup)4 tbsp
Butter¾ cup, soft, plus extra for greasing
Sugar¾ cup plus 2 tbsp
Egg3
Maida (all-purpose flour, plain flour)1⅓ cups
Baking powder2 tsp
Salta pinch
Lemonzest of 1
Milk2 tbsp

Method

6 steps
  1. 1Butter a 1.2 litre pudding basin well and spoon the golden syrup into the base.
  2. 2Beat the butter and sugar until pale and fluffy, then beat in the eggs one at a time with a spoon of the maida.
  3. 3Fold in the rest of the maida, baking powder, salt, zest and enough milk to make a soft dropping batter.
  4. 4Spoon over the syrup and smooth the top. Cover with a pleated circle of greased paper and foil, and tie tightly with string.
  5. 5Stand the basin in a large pan on a folded cloth, pour boiling water halfway up, cover and steam on a low simmer. Top up with boiling water as needed.
  6. 6Lift out carefully with a cloth, rest 5 minutes, then run a knife around and turn out onto a plate.
Serve it like this

Turn out onto a warm plate so the syrup cascades down, slice into wedges and pour over hot vanilla custard.
