Firm tofu1 large block firm tofu, pressed and cubed
Lemon juice1 tbsp
Ginger garlic paste1 tbsp
Kashmiri chilli powder2 tsp
Garam masala1 tsp
Cumin powder (ground cumin)½ tsp
Cooking oil (vegetable oil)2 tbsp
Capsicum (green capsicum, green bell pepper)1, in squares
Onion1 large, chopped
Tomato puree1¼ cups
Cashews3 tbsp, soaked
Thick coconut milk⅓ cup
Kasuri methi (dried fenugreek leaves)2 tsp
Sugar1 tsp

- 1Toss the tofu with lemon, half the ginger garlic paste, half the chilli, half the garam masala, cumin, salt and a teaspoon of oil. Rest 15 minutes.
- 2Sear the tofu and capsicum in a hot pan with a little oil, turning, until charred on several sides. Set aside.
- 3Cook the onion in the remaining oil until golden, add the remaining ginger garlic paste, chilli and tomato puree and cook until thick.
- 4Blend the masala with cashews until smooth, return to the pan with water, sugar and salt, then simmer.
- 5Add the tofu, capsicum and coconut milk, crush in the kasuri methi and remaining garam masala and simmer briefly.
Serve it like thisServe in a deep bowl with fluffy basmati rice, a swirl of coconut milk and coriander, and naan on the side.
