Ingredients

6 servings
Milk200 ml
Tea leaves (black tea leaves)2 tbsp strong black tea
Star anise1
Fresh cream (thickened cream, heavy cream)400 ml
Condensed milk (sweetened condensed milk)½ cup
Sugar1½ tbsp
Agar agar1 tsp agar agar powder
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Ripe mango1, diced

Method

5 steps
  1. 1Simmer the milk with the tea leaves and star anise on low heat for 5 minutes. Steep off the heat 5 minutes, then strain, pressing the leaves.
  2. 2Add the cream, sugar and 90 g of the condensed milk to the tea milk. Sprinkle in the agar agar and whisk.
  3. 3Bring to a boil on medium heat, stirring, then simmer 2 minutes. Stir in the vanilla.
  4. 4Pour into 6 small glasses or moulds. Cool 15 minutes, then chill in the fridge for 4 hours.
  5. 5Top with diced mango and a thin drizzle of the remaining condensed milk.
Serve it like this

Serve in short clear glasses so the layer shows. Spoon a neat mound of mango in the centre and draw a fine thread of condensed milk over it.
