Ingredients

2 servings
Sabudana (tapioca pearls)⅓ cup, large pearls
Waterfor boiling pearls and brewing tea
Jaggery¼ cup, grated
Tea leaves (black tea leaves)2 tbsp CTC tea
Whole spices4 green cardamom, crushed
Saffrona pinch
Milk1¼ cups, chilled
Sugar4 tsp
Ice cubes1 cup

Method

5 steps
  1. 1Boil 1 litre water on high heat. Add the sabudana and cook on medium for 20 minutes, stirring often, then cover off the heat for 10 minutes.
  2. 2Rinse the pearls in cold water. Melt the jaggery with 3 tbsp water on low heat for 3 minutes, add the pearls and steep 10 minutes.
  3. 3Simmer 250 ml water with the cardamom on medium heat for 2 minutes. Add the tea, simmer 2 minutes, add saffron and strain. Cool 10 minutes.
  4. 4Stir the sugar into the cold milk, then add the tea.
  5. 5Divide the pearls and syrup between 2 tall glasses. Add ice and pour in the milk tea. Serve with wide straws.
Serve it like this

Serve in tall clear glasses so the amber pearls show. Rim the straw with a cardamom pod and float two saffron strands on top.
