Ingredients

Fish1 whole pomfret, about 600 g, cleaned
Zha caisalted mustard greens, sliced
Tomato1, in wedges
Silken tofu150 g, in cubes
Dried shiitake mushrooms3, soaked and sliced
Gingerin thin strips
Pork bellya few thin slices, optional
Chicken stock (chicken broth)⅔ cup
Salta pinch
White peppera pinch
Spring onion (green onion, scallion)2, in strips
Coriander leaves (cilantro)a few sprigs

Method

4 steps
  1. 1Score the fish on both sides and place on a deep plate.
  2. 2Arrange salted vegetable, tomato, tofu, mushrooms, ginger and pork slices around and on top. Pour over the stock.
  3. 3Steam over boiling water for 10 to 12 minutes until the flesh flakes at the thickest part.
  4. 4Season with pepper and top with spring onion and coriander.
Serve it like this
