Ingredients

4 servings
Ripe plantain (ripe nendran banana)3 overripe plantains, black skinned
White maize meal (white cornmeal, maize meal)⅓ cup corn flour
Maida (all-purpose flour, plain flour)⅓ cup
Onion1 small, grated
Ginger1 tsp, grated
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)½, minced
Salt½ tsp
Cooking oil (vegetable oil)for shallow frying (about 60 ml absorbed)

Method

3 steps
  1. 1Mash the plantains until smooth.
  2. 2Mix in onion, ginger, pepper, salt and both flours to a thick batter. Rest 10 minutes.
  3. 3Fry spoonfuls flattened into small pancakes in hot oil until dark golden on both sides.
Serve it like this

Stack on a plate and serve hot with bean stew, or on their own with a cold drink.
