Ingredients

6 servings
Lamb (lamb or tender mutton)800 g on the bone
Chickpeas, dry½ cup, soaked overnight
Onion1 large, quartered
Dried lime2 dried limes, pierced
Turmeric (ground turmeric)½ tsp
Baharat1½ tsp
Saltto taste
Water2 litres
Pita breadIraqi khubz or pita, torn, ideally a day old

Method

4 steps
  1. 1Put lamb, chickpeas, onion, dried limes, turmeric, baharat and water in a pot. Bring to a boil and skim.
  2. 2Cover and simmer until the lamb is falling from the bone and the chickpeas are soft. Season with salt.
  3. 3Tear the bread into a deep platter or bowls.
  4. 4Ladle the hot broth over the bread until soaked, then top with the lamb and chickpeas.
Serve it like this

Serve on a deep platter, bread soaked, lamb and chickpeas piled on top, with raw onion and pickles alongside.
