Beef700 g shank or chuck, in large cubes
Cooking oil (vegetable oil)1½ tbsp
Gingera thumb, sliced
Garlic6 cloves
Spring onion (green onion, scallion)5 stalks, in lengths, plus some sliced
Doubanjiang2½ tbsp chilli bean paste
Tomato2, in wedges
Star anise3 pods
Whole spices1 cinnamon stick
Sichuan peppercorn1 tsp
Soy sauce3 tbsp plus 1 tsp
Dark soy sauce1 tbsp
Sugar1 tbsp
Water8 cups

Wheat noodles360 g thick wheat noodles
Bok choy (pak choi)4 to 6 heads

- 1Blanch the beef in boiling water for 5 minutes, drain and rinse.
- 2Fry ginger, garlic and spring onion in oil, then add the chilli bean paste and fry until red.
- 3Add beef, tomato, spices, both soys and sugar and toss for 2 minutes. Pour in the water.
- 4Simmer covered on low for 2 hours until the beef is very tender. Season with salt.
- 5Cook noodles and blanch bok choy separately. Fill bowls with noodles, beef and broth.
- 6Top with bok choy, pickled mustard greens and sliced spring onion.
