Beef1 kg sirloin or topside
Bacon (streaky rashers, streaky bacon)60 g, in strips for larding
Carrot3, chopped
Celeryceleriac or celery, chopped
Onion1 large, chopped
Vinegar2 tbsp
Bay leaf (indian bay leaf)3
Allspice5 berries
Black pepper8 peppercorns

Fresh cream (thickened cream, heavy cream)1 cup
Lemon1, sliced, to serve

- 1Lard the beef with bacon strips, season and rub with vinegar. Leave overnight with the vegetables and spices if you can.
- 2Brown the vegetables in butter, add the beef and brown it, then add water and spices. Cover and braise in a 160 C oven.
- 3Remove the beef. Blend the vegetables with the liquid and cream until silky. Season with sugar, salt and a little vinegar.
- 4Slice the beef and serve in the sauce with lemon, cranberries and a dollop of whipped cream.
