Ingredients

4 servings
Mutton (goat meat)bone in pieces, ribs or shoulder
Onion1, sliced
Garlic6 cloves
Ginger2.5 cm
Whole spices2 star anise, 1 cinnamon stick, 4 cloves, 4 cardamom
Fennel seeds1 tsp
Coriander seeds1½ tsp
Cumin seeds½ tsp
Black pepper1 tsp
Turmeric (ground turmeric)a pinch
Potato1 large, chunks
Carrot1, chunks
Tomato1, quartered
Cooking oil (vegetable oil)1 tbsp
Saltto taste
Water7½ cups
Shallots3, sliced and fried
Coriander leaves (cilantro)chopped

Method

5 steps
  1. 1Dry roast fennel, coriander, cumin and pepper and grind coarsely.
  2. 2Fry onion, garlic, ginger and whole spices in oil, add the mutton and ground spices and turmeric and sear.
  3. 3Add water and pressure cook for 5 whistles, then let the pressure release naturally.
  4. 4Add potato, carrot and tomato and simmer until tender. Season.
  5. 5Serve with fried shallots and coriander.
Serve it like this

Ladle into deep bowls with mutton and vegetables, fried shallots and coriander on top. Serve with sliced bread or roti.
