Classic summer pudding.

Ingredients

6 servings
White bread8 slices day old white bread, crusts off
Raspberries300 g
Strawberries250 g, halved
Redcurrants150 g
Blueberries150 g, or blackcurrants
Sugar½ cup + 2 tbsp
Water2 tbsp
Fresh cream (thickened cream, heavy cream)to serve

Method

5 steps
  1. 1Simmer the berries with the sugar and water for 3 to 4 minutes until the juices run.
  2. 2Dip bread slices in the juice and line a pudding basin, overlapping slightly with no gaps.
  3. 3Spoon in the fruit, keeping some juice back, and cover with more dipped bread.
  4. 4Cover with a saucer, set a weight on top and chill overnight.
  5. 5Turn out onto a plate and spoon the reserved juice over any pale patches. Serve with cream.
Serve it like this

Turn out onto a flat plate, cut into wedges and serve with pouring cream or crème fraîche.
