Ingredients

6 servings
Egg white3 egg whites, for meringue (or 6 bought meringue nests)
Sugar1 cup minus 2 tbsp
Strawberries500 g, chopped
Fresh cream (thickened cream, heavy cream)1¼ cups
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp

Method

4 steps
  1. 1If making meringues, whisk whites stiff, add 180 g sugar gradually and bake small dollops at 110 C for 1 1/2 hours. Cool.
  2. 2Mash a third of the strawberries with remaining sugar.
  3. 3Whip cream with vanilla to soft peaks.
  4. 4Fold in broken meringue, whole strawberries and ripple the sauce through. Serve at once.
Serve it like this

Spoon loosely into glasses or bowls, top with a whole strawberry and a mint leaf. Serve immediately.
