Ingredients

6 servings
Beef1.2 kg chuck, in large cubes
Shallots800 g small onions or shallots, peeled
Garlic5 cloves
Tomato puree¼ cup tomato paste
Tomato4, grated
Red wine250 ml dry red wine
Vinegar3 tbsp red wine vinegar
Olive oil4 tbsp
Cinnamon1 stick
Whole spices3 cloves and 4 allspice berries
Bay leaf (indian bay leaf)2
Sugar1 tsp
Saltto taste
Black pepper½ tsp

Method

4 steps
  1. 1Brown the beef in olive oil in batches. Set aside.
  2. 2Brown the onions whole in the same pot, then add garlic and tomato paste.
  3. 3Add wine and vinegar and boil a minute, then return the beef with tomato, spices, bay, sugar and enough water to almost cover.
  4. 4Cover and simmer gently until the beef is tender and the sauce is thick.
Serve it like this

Serve in deep plates with the glossy onions on top, with mashed potatoes, rice or crusty bread.
