Milk400 ml full cream milk, chilled
Almonds15 almonds
Melon seeds (melon seeds, peeled)1 tbsp magaz
Fennel seeds1 tsp
Poppy seeds (white poppy seeds)1 tsp
Black pepper8 peppercorns
Cardamom½ tsp
Sugar4 tbsp
Saffrona pinch, soaked
White rum120 ml white rum or vodka

- 1Soak the almonds, melon seeds, fennel, poppy seeds and peppercorns in water for 2 hours.
- 2Drain and grind to a fine paste with the cardamom, sugar and a splash of milk.
- 3Whisk the paste into the cold milk with the saffron and strain through a fine sieve.
- 4Chill well, then stir in the rum and serve over ice.
Serve it like thisServe chilled in small glasses or kulhads over a little ice, with crushed pistachio and rose petals on top. Gujiya and chaat alongside.
