Classic malpua.

Ingredients

6 servings
Maida (all-purpose flour, plain flour)1 cup
Rava (semolina)2 tbsp
Milk1 cup, full cream
Khoa50 g, crumbled, optional
Fennel seeds1 tsp, crushed
Cardamom¼ tsp
Gheefor frying, about this much is absorbed
Sugar1 cup, for the syrup
Water1 cup, for the syrup
Saffrona few strands

Method

5 steps
  1. 1Whisk maida, rava, khoa, fennel and cardamom with the milk into a smooth, pourable batter. Rest 30 minutes.
  2. 2Make a one string syrup with sugar, water and saffron.
  3. 3Heat ghee in a shallow pan. Pour a ladle of batter in the centre.
  4. 4Fry on medium low until golden underneath, flip and fry the other side.
  5. 5Drain and soak in warm syrup for a minute. Serve warm.
Serve it like this

Serve in small bowls, warm or chilled as it likes best, with a few chopped nuts on top.
