Ingredients

4 servings
Soya chunks1 cup dry, soaked and squeezed
Potato2 medium, boiled and mashed
Carrot1 small, grated
Onion1 small, finely chopped
Ginger1 tsp, grated
Garam masala¼ tsp
Cumin powder (ground cumin)¼ tsp
Salt¾ tsp
Lemon juice1 tsp
Coriander leaves (cilantro)2 tbsp, chopped
Cornflour (cornstarch)1½ tbsp
Breadcrumbs⅓ cup, for coating
Cooking oil (vegetable oil)2 tbsp, for shallow frying

Method

4 steps
  1. 1Soak the soya chunks in hot salted water for 10 minutes, squeeze out completely and pulse to a mince.
  2. 2Mix the soya, potato, carrot, onion, ginger, spices, salt, lemon, coriander and cornflour.
  3. 3Shape into 12 oval cutlets and coat in breadcrumbs. Chill 10 minutes.
  4. 4Shallow fry on medium heat, 3 minutes each side.
Serve it like this
