Ingredients

8 servings
Ripe mango2 ripe mangoes, pulped
Curd (plain yogurt, natural yoghurt)1½ cups thick curd
Milk¼ cup
Honey1½ tbsp, more only if the mangoes are tart
Cardamoma pinch
Saffrona few strands, optional

Method

4 steps
  1. 1Blend the mango, curd, milk, honey and cardamom until completely smooth.
  2. 2Taste and adjust. It should taste slightly sweeter than you want the pop to be.
  3. 3Crumble the saffron over the top, pour into moulds leaving 1 cm space, and freeze for an hour before pushing in the sticks.
  4. 4Freeze 5 more hours. Dip the moulds in warm water for 10 seconds to release.
Serve it like this

Serve on a tray of crushed ice with a few mango cubes alongside, and plenty of napkins.
