Classic soya chaap masala.

Ingredients

4 servings
Soya chaap400 g, about 6 sticks, in pieces
Hung curd (greek yogurt)½ cup
Ginger garlic paste1½ tbsp
Kashmiri chilli powder1½ tsp
Garam masala1 tsp
Lemon juice2 tsp
Cooking oil (vegetable oil)2 tbsp
Butter2 tbsp
Onion1 large, chopped
Tomato puree1 cup
Cashews15, soaked
Fresh cream (thickened cream, heavy cream)3 tbsp
Coriander powder (ground coriander)2 tsp
Kasuri methi (dried fenugreek leaves)1 tsp
Saltto taste
Coriander leaves (cilantro)chopped

Method

4 steps
  1. 1Boil the chaap pieces for 5 minutes if raw or frozen, drain and cool.
  2. 2Marinate with hung curd, half the ginger garlic paste, half the chilli powder, half the garam masala, lemon and salt for 30 minutes. Sear in a hot pan with 1 tbsp oil until charred.
  3. 3Heat the remaining oil and half the butter, fry the onion golden, add remaining ginger garlic paste and powders, then tomato puree and blended cashews. Cook until oil separates.
  4. 4Add the chaap, a splash of water, simmer 5 minutes. Finish with cream, remaining butter, garam masala and kasuri methi.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
