Ingredients

6 servings
Mutton (goat meat)800 g boneless lamb, cubed
Dried apricot⅔ cup
Onion2: one in petals, one grated
Curry powder1 tbsp
Turmeric (ground turmeric)½ tsp
Apricot jam (apricot preserves)2 tbsp
Vinegar3 tbsp
Garlic3 cloves
Bay leaf (indian bay leaf)3
Cooking oil (vegetable oil)1½ tbsp
Saltto taste

Method

4 steps
  1. 1Fry grated onion and garlic in oil, add curry powder and turmeric, then jam, vinegar, bay and salt. Simmer 3 minutes and cool.
  2. 2Toss lamb in the marinade and refrigerate overnight.
  3. 3Thread lamb, apricots and onion petals onto skewers.
  4. 4Grill over hot coals, basting with marinade, until charred and cooked to your liking.
Serve it like this

Stack skewers on a board with pap, chakalaka and a green salad; spoon warm marinade over.
