Ingredients

6 servings
Peanuts1 cup raw peanuts
Beef500 g beef with bone
Water2 litres
Onion1, chopped
Carrot1, small dice
Capsicum (green capsicum, green bell pepper)½, diced
Green peas¾ cup
Macaroni½ cup
Cumin powder (ground cumin)½ tsp
Dried oregano½ tsp
Potato3, in thin fries
Cooking oil (vegetable oil)for frying
Flat leaf parsleychopped
Saltto taste

Method

5 steps
  1. 1Simmer the beef in the water with salt for 50 minutes.
  2. 2Blend the raw peanuts with 2 cups of the broth until very smooth.
  3. 3Fry the onion, capsicum and carrot with cumin and oregano, add to the pot with the peanut milk and simmer 20 minutes, stirring often.
  4. 4Add peas and macaroni and cook 10 minutes. Fry the potato fries until crisp.
  5. 5Serve topped with fries and parsley.
Serve it like this

Ladle into wide bowls, top with a handful of crisp fries and parsley, and serve with a fresh chilli salsa on the side.
