Maida (all-purpose flour, plain flour)5 cups
Butter½ cup, or lard
Sugar⅓ cup, plus 1 tbsp for filling
Egg1 for dough, 2 hard boiled
Achiote paste2 tsp, for colour
Water¾ cup, warm

Beef500 g, finely diced
Potato2, small dice, parboiled
Green peas1 cup
Onion2, finely chopped
Spring onion (green onion, scallion)3
Gelatin (gelatine)1½ tbsp
Beef stock (beef broth)400 ml
Cumin powder (ground cumin)1 tsp
Dried oregano1 tsp
Red chilli powder (indian red chili powder)1 tsp (ají)
Raisins¼ cup
Black olives16 small

Cooking oil (vegetable oil)2 tbspMethod
- 1Fry the onions in oil with chilli, cumin and oregano. Add beef, stock and a spoon of sugar and simmer 15 minutes. Add potato, peas and spring onion.
- 2Dissolve the gelatin in a little hot stock and stir in. Cool, add parsley, then chill until set, at least 4 hours.
- 3Warm the butter with achiote. Mix flour, sugar and salt, add the butter, egg and warm water and knead to a smooth dough. Rest 30 minutes.
- 4Roll 14 cm circles, add filling, a piece of egg, an olive and raisins. Fold and crimp a rope along the top.
- 5Stand upright on a tray and bake at 230°C for 15 to 18 minutes.
