Ingredients

4 servings
Porkpork ribs or belly, in chunks
Tamarinda large lime size piece, soaked, or sinigang mix
Water7½ cups
Tomato2, quartered
Onion1, quartered
Radish (daikon radish, mooli)1, sliced
Colocasia (taro root, eddoes)4 small gabi, halved
Okra (lady's finger)8
Green beanslong beans, cut
Brinjal (eggplant, aubergine)1, sliced
Water spinach (kang kong)kangkong, in lengths
Green chilli2 long green chillies
Fish sauce2 tbsp

Method

4 steps
  1. 1Simmer pork with tomato, onion and water, skimming, until tender.
  2. 2Add colocasia and radish and cook until the colocasia is soft.
  3. 3Add tamarind water, fish sauce and green chillies. Taste: it should be boldly sour.
  4. 4Add beans, okra and brinjal and cook 3 minutes, then the kangkong for 1 minute.
Serve it like this

Serve in a big bowl at the centre of the table with pork and vegetables piled high, rice on the side and fish sauce with chillies to dip.
