Shrimp scampi.

Ingredients

4 servings
Pasta300 g linguine
Prawns (shrimp)450 g, peeled and deveined
Butter4 tbsp
Olive oil2 tbsp
Garlic6 cloves, sliced
Dried red chilli½ tsp flakes
Dry white wine⅓ cup
Lemon juice2 tbsp, plus zest
Flat leaf parsleya handful, chopped
Saltto taste
Black pepperto taste

Method

5 steps
  1. 1Boil the linguine in well salted water until 1 minute short of al dente. Save a mug of pasta water.
  2. 2Meanwhile heat oil and half the butter, add garlic and chilli and cook gently.
  3. 3Add the prawns and cook until pink on both sides.
  4. 4Pour in the wine and let it bubble down by half.
  5. 5Add drained pasta, remaining butter, lemon and a splash of pasta water. Toss hard until glossy, then add parsley.
Serve it like this

Twirl into warm shallow bowls, tuck the prawns on top, spoon over the pan sauce and finish with parsley and lemon zest.
