Ingredients

4 servings
Onion2 medium, sliced
Desiccated coconut (unsweetened shredded coconut)¼ cup dry coconut
Garlic8 cloves
Ginger2.5 cm
Tomato2 medium, chopped
Red chilli powder (indian red chili powder)2½ tsp
Goda masala2½ tsp
Turmeric (ground turmeric)½ tsp
Cumin seeds1 tsp
Mustard seeds½ tsp
Cooking oil (vegetable oil)3 tbsp
Water2 cups
Sev1½ cups thick sev
Coriander leaves (cilantro)a handful
Saltto taste

Method

4 steps
  1. 1Dry roast the coconut until brown. Roast half the onions in a spoon of oil until dark. Grind both with garlic and ginger to a paste.
  2. 2Heat the rest of the oil, crackle mustard and cumin, add the remaining onion and cook until soft. Add tomato and cook until mushy.
  3. 3Add the paste and spice powders and fry until oil floats. Add water and salt and simmer 8 minutes.
  4. 4Serve the gravy in bowls and add the sev and coriander just before eating.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
