Ingredients

4 servings
Rice noodlesflat thin rice noodles
Chicken, bonelessminced or finely diced
Tomato4, chopped
Garlic8 cloves, half sliced for oil
Shallots5, minced
Turmeric (ground turmeric)a pinch
Kashmiri chilli powder1 tsp
Soy sauce1½ tbsp
Jaggery1 tsp
Cooking oil (vegetable oil)3 tbsp, split
Peanutsroasted and crushed
Spring onion (green onion, scallion)sliced
Coriander leaves (cilantro)chopped
Mustard greenspickled mustard greens, to serve

Method

4 steps
  1. 1Fry sliced garlic in 2 tbsp oil until golden. Keep the oil and chips.
  2. 2Fry shallots, minced garlic, turmeric and chilli in the remaining oil. Add chicken and cook through with no pink.
  3. 3Add tomatoes, soy and jaggery and simmer into a thick sauce.
  4. 4Cook noodles, toss with garlic oil and soy. Top with sauce, peanuts, garlic chips, herbs and pickled greens.
Serve it like this

Serve noodles in a bowl topped with the sauce, peanuts and garlic chips, with pickled greens and a cup of broth on the side.
