Classic Scottish tablet.

Ingredients

Sugar2¼ cups
Milk½ cup
Butter4 tbsp
Condensed milk (sweetened condensed milk)⅔ cup
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp

Method

5 steps
  1. 1Gently dissolve the sugar in the milk and butter over low heat.
  2. 2Add the condensed milk and bring to a boil, stirring constantly.
  3. 3Boil to 118°C, or until a drop forms a soft ball in cold water. Take great care, it is very hot.
  4. 4Take off the heat, add the vanilla and beat hard for about 5 minutes.
  5. 5Pour into a lined tin and score into squares while still warm.
Serve it like this
