Ingredients

Beefbrisket, or brisket and tongue
Water1½ litres
Shallots10
Garlic6 cloves
Gingera thumb
Galangala thumb
Turmeric (ground turmeric)2 tsp
Fresh red chillies (fresh red chiles)6
Coriander seeds2 tsp
Cumin seeds1 tsp
Lemongrass2 stalks
Kaffir lime leaves (makrut lime leaves)4
Black pepper1 tsp
Salt1½ tsp
Cooking oil (vegetable oil)1½ tbsp
Rice flour⅓ cup, in water
Cooked riceketupat or lontong (pressed rice cakes)

Method

5 steps
  1. 1Blend the shallots, garlic, ginger, galangal, turmeric, chillies, coriander, cumin and pepper to a paste.
  2. 2Boil the beef in the water with half the paste, the lemongrass and lime leaves for 75 minutes until tender.
  3. 3Cool the beef, cut into cubes and thread onto skewers. Strain the broth.
  4. 4Fry the rest of the paste in the oil, add about 800 ml broth and whisk in the rice flour. Simmer until thick.
  5. 5Grill the skewers until charred, about 5 minutes, and pour gravy over. Serve with ketupat.

Serve skewers on a banana leaf with gravy poured over, ketupat cubes alongside and fried shallots on top.
