Ingredients

8 servings
Saskatoon berries (serviceberries)5 cups, fresh or frozen, or blueberries
Sugar¾ cup
Cornflour (cornstarch)3½ tbsp
Lemon juice1½ tbsp
Maida (all-purpose flour, plain flour)2½ cups, for crust
Butter180 g cold for crust, 20 g to dot
Salt½ tsp
Water6 tbsp iced water

Method

5 steps
  1. 1Rub cold butter into flour and salt, add iced water and form two discs. Chill 1 hour.
  2. 2Simmer the berries with 2 tbsp water for 5 minutes, then stir in sugar, cornflour and lemon juice.
  3. 3Line a 23 cm dish, add the filling, dot with butter and cover with the second crust. Cut vents and brush with milk.
  4. 4Bake at 220°C for 15 minutes, then 180°C for 40 minutes until bubbling through the vents.
  5. 5Cool at least 3 hours before slicing.
Serve it like this

Serve slices at room temperature with vanilla ice cream, the dark juices spilling onto the plate.
