Sannas, Mangalorean style.

Ingredients

6 servings
Rice1½ cups, soaked 4 hours
Fresh grated coconut1 cup
Sugar2 tbsp
Instant dry yeast1 tsp
Salt1 tsp
Water1½ cups

Method

4 steps
  1. 1Grind soaked rice and coconut with water to a smooth, thick batter.
  2. 2Mix yeast and sugar with a little warm water, stir into the batter with salt. Ferment 8 hours.
  3. 3Pour into greased moulds or small bowls, three quarters full.
  4. 4Steam 15 to 18 minutes until a toothpick comes out clean.
Serve it like this

Stack them in a cloth lined basket so they stay soft and warm, with a little ghee on top if you like.
