Ingredients

5 servings
Rava (semolina)1 cup Bombay rava
Sugar1 cup
Ghee5 tbsp
Water2½ cups
Milk2 tbsp, warm
Saffrona pinch
Cashewsa handful
Raisins1 tbsp
Cardamom½ tsp

Method

6 steps
  1. 1Soak the saffron in the warm milk. Fry the cashews and raisins in a spoon of ghee and set aside.
  2. 2In 2 tbsp ghee, roast the rava on low heat, stirring.
  3. 3Bring the water to a boil with the saffron milk. Pour into the rava slowly, stirring all the time.
  4. 4Cover and cook on low until the rava is soft.
  5. 5Add the sugar and the rest of the ghee and keep stirring.
  6. 6Stir in the cardamom, cashews and raisins. Serve warm, with khara bath for a chow chow plate.
Serve it like this

Serve in small bowls, warm or chilled as it likes best, with a few chopped nuts on top.
