Ingredients

3 servings
Salmon360 g sushi grade, cubed
Soy sauce3 tbsp
Sesame oil2 tsp
Onion¼ sweet onion, thinly sliced
Spring onion (green onion, scallion)2, sliced
Sesame seeds2 tsp, toasted
Short grain rice (sushi rice)1 cup sushi rice
Rice vinegar2 tbsp
Sugar2 tsp
Cucumber1, diced
Avocado1, sliced
Edamame¾ cup, boiled
Mayonnaise2 tbsp
Red chilli sauce2 tsp sriracha
Nori sheets1 sheet, in strips
Salta pinch

Method

4 steps
  1. 1Rinse rice until the water runs clear, then cook. Fold in vinegar, sugar and salt while hot.
  2. 2Toss the cold salmon cubes with soy, sesame oil, onion and spring onion. Chill 10 minutes.
  3. 3Mix mayonnaise and sriracha for spicy mayo.
  4. 4Build bowls: rice, salmon, cucumber, avocado, edamame. Drizzle spicy mayo, top with sesame and nori.
Serve it like this

Serve in wide bowls with salmon, avocado and cucumber in sections over rice, nori strips and sesame on top, extra soy on the side.
