Ingredients

Spinach1 large bunch, chopped
Dill leavesa handful (suva)
Fenugreek leavesa small handful
Chana dal (split chickpeas)⅓ cup, soaked 30 minutes
Onion1 medium, chopped
Tomato2 medium, chopped
Potato1 small, cubed
Brinjal (eggplant, aubergine)1 small, cubed
Bottle gourd (opo squash, calabash)a small piece, cubed
Green chilli2
Ginger garlic paste1 tbsp
Turmeric (ground turmeric)½ tsp
Red chilli powder (indian red chili powder)1 tsp
Coriander powder (ground coriander)1 tsp
Saltto taste
Cooking oil (vegetable oil)2 tbsp, divided
Garlic3 cloves, sliced, for the tadka
Dried red chilli1
Cumin seeds½ tsp
Water1½ cups

Method

  1. 1Wash the spinach, dill and methi in plenty of water, lifting them out so the grit stays behind. Drain and chop.
  2. 2Heat 1 tbsp oil, cook the onion until soft, then add the ginger garlic paste, green chilli, turmeric, chilli and coriander powders, and the tomato.
  3. 3Add the drained chana dal, greens, potato, brinjal, bottle gourd, salt and water. Pressure cook for 3 whistles and let the pressure release naturally.
  4. 4Mash coarsely with a wooden masher or the back of a ladle.
  5. 5Heat the remaining oil, fry the cumin, garlic and red chilli, and pour over the bhaji. Serve with rice or chapati.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
