Ingredients

4 servings
Potato8 to 10 small potatoes, skin on
Cooking oil (vegetable oil)for frying (about 4 tbsp absorbed)
Red chilli powder (indian red chili powder)1¼ tsp
Dry mango powder1 tsp
Coriander powder (ground coriander)1 tsp
Chaat masala¾ tsp
Saltto taste

Method

4 steps
  1. 1Cut potatoes into thick rounds or halves, leaving the skin on. Soak in water 10 minutes and pat dry.
  2. 2Fry in medium hot oil until just cooked and pale golden. Drain.
  3. 3Press each piece flat with the base of a glass or your palm.
  4. 4Fry again in hot oil until deep golden and crisp, then toss with the spice powders and salt.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
