Ingredients

4 servings
Basmati rice1½ cups, soaked 20 minutes
Onion3 medium, thinly sliced
Cooking oil (vegetable oil)2 tbsp
Ghee2 tsp
Whole spices1 black cardamom, 4 cloves, 1 cinnamon stick
Bay leaf (indian bay leaf)2
Black pepper10 peppercorns
Cumin seeds½ tsp
Saltto taste
Water2½ cups

Method

4 steps
  1. 1Heat oil and ghee and fry the onions on medium, stirring, until deep brown but not burnt.
  2. 2Add whole spices, bay leaves, pepper and cumin and fry 30 seconds.
  3. 3Add water and salt and bring to a boil.
  4. 4Add drained rice, cover and cook on low until the water is absorbed, 12 to 15 minutes. Rest 5 minutes and fluff.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
