Ingredients

Beef800 g flank
Onion2, sliced
Capsicum (green capsicum, green bell pepper)1, sliced
Red bell pepper (red capsicum, red pepper)1, sliced
Garlic6 cloves
Tomato puree¾ cup
Cumin powder (ground cumin)1 tsp
Dried oregano1 tsp
Bay leaf (indian bay leaf)2
Vinegar1 tbsp
Green olives⅓ cup
Cooking oil (vegetable oil)2 tbsp

Method

4 steps
  1. 1Pressure cook beef with bay, half the onion and salt for 7 whistles. Let pressure release naturally.
  2. 2Shred the beef along the grain. Keep the broth.
  3. 3Fry onion, peppers and garlic in oil until soft, then cumin and oregano.
  4. 4Add tomato purée, vinegar, beef and a cup of broth. Simmer 15 minutes, then stir in olives.
Serve it like this

Serve over white rice with black beans and fried ripe plantains on the side.
