Ingredients

8 servings
Beef1.5 kg topside or rib of beef
Cooking oil (vegetable oil)1 tbsp for beef, 3 tbsp for pudding tins
Salt2 tsp
Black pepper1 tsp
Dried mixed herbs (italian seasoning)1 tsp thyme
Garlic4 cloves
Maida (all-purpose flour, plain flour)1 cup for puddings, 2 tbsp for gravy
Egg4
Milk¾ cup plus 2 tbsp
Water2 cups beef stock
Prepared mustardEnglish mustard or horseradish, to serve

Method

5 steps
  1. 1Rub beef with oil, salt, pepper, thyme and garlic. Rest 1 hour at room temperature.
  2. 2Roast at 220 C for 20 minutes, then 160 C for about 15 minutes per 500 g for medium rare. Rest 30 minutes covered.
  3. 3Whisk flour, eggs, milk and a pinch of salt; rest 30 minutes.
  4. 4Heat oil in a 12 hole muffin tin at 230 C until smoking. Pour in batter and bake 20 to 25 minutes without opening the door.
  5. 5Stir 2 tbsp flour into the beef pan juices, whisk in stock and simmer to gravy.
Serve it like this

Carve thin slices onto warm plates, add a Yorkshire pudding filled with gravy, roast potatoes and greens. Mustard on the side.
