Ingredients

4 servings
Rava (semolina)1 cup
Curd (plain yogurt, natural yoghurt)⅔ cup
Water½ cup
Ginger1 tsp, grated
Salt¾ tsp
Sugar1 tsp
Lemon juice1 tsp
Baking soda (bicarb soda, bicarbonate of soda)½ tsp, or 1 tsp fruit salt
Cooking oil (vegetable oil)4 tsp
Mustard seeds½ tsp
Sesame seeds1 tsp
Curry leaves1 sprig
Fresh grated coconut1 tbsp
Coriander leaves (cilantro)1 tbsp, chopped

Method

4 steps
  1. 1Whisk the rava, curd, water, ginger, salt and sugar into a thick batter. Rest 15 minutes.
  2. 2Heat a steamer and grease a 20 cm tin. Stir the lemon juice and baking soda into the batter and pour into the tin at once.
  3. 3Steam on high for 12 to 15 minutes.
  4. 4Heat the oil, add mustard, sesame and curry leaves and pour over the dhokla. Add coconut and coriander and cut into squares.
Serve it like this

Cut into small squares and pack with green chutney thinned with curd. At home, serve on a plate with a sprinkle of coconut.
