Ingredients

Rava (semolina)1 cup
Curd (plain yogurt, natural yoghurt)1 cup
Sugar¾ cup
Cooking oil (vegetable oil)6 tbsp
Milk½ cup
Maida (all-purpose flour, plain flour)¼ cup
Baking powder1¼ tsp
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Cardamom½ tsp
Tutti frutti (glacé fruit, candied fruit)¼ cup
Cashews2 tbsp

Method

5 steps
  1. 1Whisk the rava, curd, sugar, oil and milk. Rest 20 minutes.
  2. 2Heat the oven to 170 C and line an 8 inch tin.
  3. 3Stir in the maida, baking powder, soda and cardamom, then fold in the tutti frutti.
  4. 4Pour into the tin, top with cashews and bake 35 to 40 minutes.
  5. 5Cool and slice into squares.
Serve it like this

Serve squares at room temperature with chai, or warm with a drizzle of honey.
