Ingredients

4 servings
Rava (semolina)¾ cup
Curd (plain yogurt, natural yoghurt)¾ cup
Water¼ cup
Onion1 small, finely chopped
Carrot1 small, grated
Capsicum (green capsicum, green bell pepper)2 tbsp, finely chopped
Green chilli1, chopped
Ginger1.5 cm, grated
Coriander leaves (cilantro)2 tbsp
Salt½ tsp
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Cooking oil (vegetable oil)1 tbsp
Mustard seeds½ tsp
Curry leavesa few, chopped

Method

4 steps
  1. 1Mix rava, curd, water and salt. Rest 15 minutes.
  2. 2Temper mustard and curry leaves in 1 tsp oil and add to the batter with the vegetables.
  3. 3Stir in baking soda just before cooking.
  4. 4Heat the appe pan, add a few drops of oil to each cup, fill and cook covered 3 minutes. Flip and cook 2 minutes more.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
