Classic badam halwa.

Ingredients

8 servings
Almonds1⅓ cups, soaked overnight and peeled
Milk¾ cup plus 2 tbsp
Sugar¾ cup
Ghee6 tbsp
Saffrona big pinch, soaked in 1 tbsp warm milk
Cardamom¼ tsp

Method

4 steps
  1. 1Soak almonds overnight, slip off the skins and grind with the milk to a fine paste.
  2. 2Cook the paste with the sugar in a heavy pan on medium, stirring all the time.
  3. 3Add ghee a spoon at a time, stirring after each, until the halwa leaves the pan and turns glossy.
  4. 4Stir in saffron milk and cardamom and cook one more minute. Serve warm.
Serve it like this
