Whole wheat flour (wholemeal atta flour, chapati flour)1 cup
Maida (all-purpose flour, plain flour)⅓ cup
Cooking oil (vegetable oil)2 tbsp, split
Rajma, dry (dried red kidney beans)½ cup dry, soaked and boiled
Onion1, chopped
Garlic2 cloves, chopped
Tomato2, chopped, split
Cumin powder (ground cumin)½ tsp
Red chilli powder (indian red chili powder)¾ tsp
Dried mixed herbs (italian seasoning)½ tsp oregano
Sweet corn kernels (corn kernels)⅓ cup
Capsicum (green capsicum, green bell pepper)½, diced
Lettuceshredded
Hung curd (greek yogurt)⅓ cup, seasoned
Processed cheese (american cheese)½ cup, grated
Lemon juice2 tsp
Coriander leaves (cilantro)2 tbsp, chopped

- 1Knead whole wheat flour, maida, a pinch of salt, 1 tsp oil and water into a soft dough. Roll 8 thin rounds and cook lightly on a tawa.
- 2Drape each round over the bars of an oven rack or fold in a pan and bake or dry roast until crisp.
- 3Saute onion and garlic in oil, add half the tomato, cumin, chilli, oregano and salt, then rajma. Mash lightly and cook till thick.
- 4Toss remaining tomato, corn, capsicum, coriander, lemon and salt into a salsa.
- 5Fill shells with beans, lettuce, salsa, curd and cheese. Serve straight away.
Serve it like thisStack them in a cloth lined basket so they stay soft and warm, with a little ghee on top if you like.
