Ingredients

12 servings
Whole wheat flour (wholemeal atta flour, chapati flour)4 cups atta
Waterabout 1 1/4 cups
Salt1 tsp
Cooking oil (vegetable oil)3 tbsp, for dough and layering

Method

5 steps
  1. 1Knead the atta, salt, a spoon of oil and water into a soft dough. Rest 20 minutes.
  2. 2Divide into 12. Roll each into a circle, brush with oil, fold into a triangle or square and roll out again.
  3. 3Cook each on a medium hot tawa for 30 seconds a side, just until spots appear but not browned.
  4. 4Cool completely, stack with baking paper between each, bag and freeze flat.
  5. 5To cook, put frozen parathas straight on a hot tawa with a little oil or ghee and cook until golden on both sides.
Serve it like this

Serve hot off the tawa with curd, pickle and any sabzi, or roll with leftover filling for the tiffin.
