Ingredients

4 servings
Potato4 medium, peeled
Maida (all-purpose flour, plain flour)½ cup
Milk1¼ cups
Egg2
Salt¾ tsp
Butter3 tbsp, for frying
Bacon (streaky rashers, streaky bacon)200 g thick cut, or salted pork belly
Lingonberry jam5 tbsp

Method

5 steps
  1. 1Whisk flour, milk, eggs and salt into a smooth batter and rest 10 minutes.
  2. 2Fry the bacon until crisp and keep warm. Leave the drippings in the pan.
  3. 3Grate the potatoes coarsely straight into the batter and stir.
  4. 4Fry thin ladlefuls in butter and drippings over medium high heat, about 3 minutes per side.
  5. 5Serve with bacon and lingonberry jam.
Serve it like this

Overlap two or three pancakes on a warm plate, lay the bacon over and add a generous spoon of lingonberries. Eat straight away while crisp.
