Ingredients

Maida (all-purpose flour, plain flour)1¼ cups
Rava (semolina)3 tbsp fine semolina
Sugar1 tbsp for batter, 1 cup for syrup, 1/4 cup for filling
Instant dry yeast1 tsp
Baking powder1 tsp
Milk¾ cup, warm
Water1½ cups
Walnuts1½ cups, chopped
Cinnamon powder1 tsp
Lemon juice1 tbsp
Orange blossom water (orange flower water)2 tsp
Cooking oil (vegetable oil)for frying, about 80 g absorbed

Method

5 steps
  1. 1Make the syrup: boil 1 cup sugar with 2/3 cup water 10 minutes, add lemon and orange blossom water. Cool.
  2. 2Whisk flour, semolina, 1 tbsp sugar, yeast, baking powder, milk and the rest of the water to a pourable batter. Rest 30 minutes.
  3. 3Pour 2 tbsp batter on a hot nonstick pan. Cook on one side only until the top is covered in holes and dry.
  4. 4Mix walnuts, sugar and cinnamon. Fill each pancake, fold into a half moon and pinch the edges shut.
  5. 5Fry until golden, drain and dip straight into the cool syrup.
Serve it like this

Arrange on a platter drizzled with syrup and scattered with crushed pistachios. Serve with mint tea after iftar.
