Classic plokkfiskur.

Ingredients

4 servings
Fish500 g cod or haddock, poached
Potato4 medium, boiled and peeled
Onion1 large, chopped
Butter2 tbsp for the sauce, rest for the bread
Maida (all-purpose flour, plain flour)¼ cup
Milk1⅔ cups
Saltto taste
White pepper½ tsp, plenty
Spring onion (green onion, scallion)chives, snipped
Rye breaddense rye bread, buttered

Method

5 steps
  1. 1Poach the fish in barely simmering salted water until it just flakes. Boil the potatoes separately.
  2. 2Soften the onion in 2 tbsp butter, stir in the flour for a minute, then whisk in the milk gradually.
  3. 3Fold in the flaked fish and break the potatoes in roughly with a spoon.
  4. 4Season generously with salt and lots of white pepper.
  5. 5Serve hot with chives and dark rye bread spread thickly with butter.
Serve it like this

Spoon onto warm plates and scatter chives. Serve with thick slices of buttered dark rye bread.
