Maida (all-purpose flour, plain flour)4 cups 00 flour or maida
Water1⅓ cups, cool
Instant dry yeast1 tsp
Salt2 tsp
Mozzarella250 g, torn
Gorgonzola80 g, in small pieces
Processed cheese (american cheese)80 g fontina or any melting cheese
Parmesan⅓ cup
Olive oil1 tbsp
Walnutsa few, optional
Method
4 steps
1Mix flour, water, yeast and salt into a soft dough. Knead 10 minutes, cover and rise until doubled (2 hours, or overnight in the fridge for better flavour). Divide into 4 balls and rest 30 minutes.
2Heat the oven to its maximum (250C or more) with a pizza stone or upturned heavy tray inside for 45 minutes.
3Stretch dough, brush with oil and scatter the four cheeses evenly.
4Bake 7 to 9 minutes until bubbling and spotted gold.
Serve it like this
Cut into wedges on a board and serve hot. A peppery green salad alongside cuts the richness.
