Ingredients

3 servings
Urad papad4 urad papads, roasted and broken
Curd (plain yogurt, natural yoghurt)1 cup, whisked
Besan (chickpea flour, gram flour)1 tbsp
Cooking oil (vegetable oil)1 tbsp
Cumin seeds1 tsp
Asafoetidaa pinch
Green chilli1, slit
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)¾ tsp
Coriander powder (ground coriander)1½ tsp
Water¾ cup
Salta pinch, papad is salty
Coriander leaves (cilantro)chopped

Method

3 steps
  1. 1Whisk curd with besan, turmeric, chilli and coriander powder and water until smooth.
  2. 2Heat oil, add cumin, asafoetida and green chilli. Pour in the curd mix and stir continuously until it boils.
  3. 3Simmer 3 minutes, add a pinch of salt and the broken papads. Turn off the heat within a minute and serve immediately.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
