Ingredients

8 servings
Moong dal (split yellow mung beans)1 cup, soaked 4 hours
Ghee⅔ cup
Sugar1 cup
Milk1¼ cups
Water¾ cup
Khoa50 g, crumbled, optional
Cardamom½ tsp
Saffrona pinch
Almondsa few, sliced
Pistachiosa few, sliced

Method

6 steps
  1. 1Drain the dal well and grind to a coarse paste with very little water.
  2. 2Heat the ghee in a heavy kadai, add the paste and stir continuously on low to medium heat.
  3. 3Keep stirring until the dal turns golden brown and the ghee starts to separate.
  4. 4Meanwhile heat the milk, water, sugar and saffron until the sugar dissolves.
  5. 5Carefully pour the hot milk into the dal, standing back, and stir.
  6. 6Add the khoa and cook, stirring, until thick and the ghee separates again. Stir in the cardamom and nuts.
Serve it like this

Serve in small bowls, warm or chilled as it likes best, with a few chopped nuts on top.
