Ingredients
Paneer4 thick slabs, 100 g each
Olive oil1½ tbsp
Butter2 tsp
Garlic2 cloves, minced
Dried mixed herbs (italian seasoning)1 tsp
Black pepper1 tsp crushed
Lemon juice2 tsp

Onion1 small, finely chopped
Fresh cream (thickened cream, heavy cream)¼ cup
Broccoli1 cup florets
Zucchini (courgette, baby marrow)1, sliced
Carrot1, sliced
Capsicum (green capsicum, green bell pepper)1, in strips
Method
5 steps
1Pat the paneer dry and rub with herbs, half the pepper, lemon, salt and a little oil. Rest 10 minutes.
2Sear in a hot pan with a little oil until golden on both sides. Keep warm.
3Sauté the vegetables in the rest of the oil with salt until tender crisp.
4For the sauce, melt butter, soften the onion and garlic, add the rest of the crushed pepper, then the cream and a splash of water. Simmer until it coats a spoon.
5Plate the vegetables, set the paneer on top and pour the sauce over.
Serve it like this
Pile the vegetables in the centre of a warm plate, rest the paneer on top and pour the pepper sauce over. Mashed potatoes on the side.
