Ingredients

4 servings
Rice¾ cup
Moong dal (split yellow mung beans)½ cup
Spinach1 bunch, blanched and pureed
Garlic3 cloves, chopped
Ginger1.5 cm, grated
Green chilli1
Cumin seeds1 tsp
Asafoetidaa pinch
Turmeric (ground turmeric)¼ tsp
Ghee2 tbsp
Salt1¼ tsp
Water4½ cups
Dried red chilli1
Lemon juice2 tsp

Method

4 steps
  1. 1Rinse rice and dal. Pressure cook with turmeric, salt and water for 3 whistles. Let the pressure release naturally.
  2. 2Stir in the spinach puree and simmer 3 minutes.
  3. 3Heat ghee, add cumin, asafoetida, garlic, ginger, green chilli and red chilli. Cook till garlic is golden.
  4. 4Pour the tadka over and finish with lemon.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
